Well, a bunch of us have decided to try making a Lambic style beer as a club project. The basic plan:
- Get a barrel
- Each contributor brew a batch of Lambic recipe beer
- Combine all contributions in barrel
- Add various purchased Lambic bacteria cultures and dregs from bottles of Gueuze
- Let it perk for a year or more.
- If good enough, enter in a competition!
And, of course, we will document the proceedings here!
We’re just starting out, but Dick Gabler has donated a 58gal french-oak wine barrel for our use. Here is Dick and Mark Crain cleaning out the Barrel:
